A lighter cake to enjoy with fresh cream is the classic sponge cake. These cakes are different to the other cakes that we offer as they use a fat like butter whereas sponge cakes are flour, sugar and eggs to keep them light in texture. Best eaten within a couple of days and always kept in the fridge.
